Coconut Flour Chocolate Chip Cookies
These soft and crispy Coconut Chocolate Chip Cookies are a delicious twist on traditional Chocolate Chip Cookies. They freeze well and are great for care packages.

INGREDIENTS:
1/4 cup coconut flour
1/4 cup coconut oil, melted
1/4 cup honey*
1/4 cup dark chocolate chips
2 whole eggs
3 tsp almond powder or cashew nut powder
2 tsp butter
1 teaspoon vanilla extract
1/4 teaspoon salt
METHOD:
Mix all the ingredients except the chocolate chips to form a runny mixture and set aside.
After the mixture thickens, add chocolate chips and stir to distribute them evenly.
Line the baking tray with parchment paper and pour the mixture in the baking tray. Spread the mixture evenly with a spoon.
Preheat the oven to 350 degrees Fahrenheit.
Bake for approximately 12 to 15 mins. Cookies are ready!
*honey can be replaced with agave syrup or a sweetener.
