Brazilian Chicken With Coconut

INGREDIENTS

2 Chicken breasts

1/2 can Cocofly Coconut Milk

2 tbsp Cocofly Organic Extra Virgin Coconut Oil

1 tsp Fresh coriander

1 tsp Fresh parsley

1/2 tsp Cumin powder

1/2 tsp Paprika powder

1/2 tsp Cayenne pepper

1/2 tsp Salt and pepper

1/2 tsp Ginger (chopped)

1/2 tsp Garlic (chopped)

1/4 tsp Coriander powder

1/4 tsp Turmeric powder

1 Fresh chili red/green (chopped)

1 Onion (chopped)

METHOD

Cut the chicken into medium pieces and marinate the chicken with the dried powder and 1 tbsp of coconut oil.

Leave for half an hour.

Sauté onions, garlic, and ginger in the remaining coconut oil.

Add the chicken and fry gently.

Add coconut milk and boil gently. Add more seasoning if required.

Add the chopped chili.

Garnish with the chopped herbs.

Serve with steamed rice.
