German Christmas Coconut Cookies

These coconut cookies are one of the most popular Christmas cookies in Germany! Made by using three ingredients only, these chunks of joys are gluten-free, lactose-free, and super delicious. You can serve them as Dessert on Christmas Eve and store the rest in an airtight container for later use.

INGREDIENTS

4 Egg whites

1 cup Sugar

2 cups Cocofly Unsweetened Shredded Coconut

METHOD

Preheat the oven to 300 degrees Fahrenheit and line two baking sheets with parchment paper.

Whisk egg whites in a bowl until stiff peaks form. Add sugar slowly and continue beating. Fold in unsweetened shredded coconut with a spatula.

Using a spoon, place mounds of coconut mixture 2 inches apart onto the baking sheets.

Bake 15 to 20 minutes in the preheated oven until lightly browned.

Allow to cool completely and then store in an airtight container.

The cookies are perfect with mulled wine or a hot cup of coffee.
