Coconut Barfi

Barfi is a luscious Indian dessert that is eaten around major festivals such as Diwali. Coconut Barfi is a dense block of shredded coconut with added sugar to bind it together and give it that lip-smacking flavor. You can share these with friends and family, or use them as dessert during a festive gathering.

INGREDIENTS

 

3 cup Cocofly Unsweetened Shredded Coconut
2 cup Sugar
½ cup Cocofly Coconut Milk
2 tbsp crushed Almonds & Pistachio (roasted)
¼ tsp Cardamom powder

 

METHOD

 

Take a saucepan and heat sugar in it until it melts completely.

Once the sugar melts completely, add the desiccated coconut and stir. As the mixture thickens, add coconut milk.

Keep stirring for 25 mins, until mixture binds together & holds shape.

Add cardamom powder and mix well.

Transfer the mixture to a rectangular baking tray lined with baking paper.

Spread the mixture evenly with a spatula and sprinkle crushed almonds & pistachio over it.

Let it sit for 15 mins, then unmould & cut into pieces.

Place in an airtight container & refrigerate.
