Coconut Banana Bread

This gluten & dairy-free bread is made using the delightful combination of coconut & banana. You can enjoy it warm out of the oven or you can freeze it to use later.

INGREDIENTS

3/4 cup Cocofly Coconut Flour

1/2 cup Cocofly Coconut Palm Sugar

3 Bananas (peeled & sliced)

5 Eggs

1 tsp Cocofly Organic Extra Virgin Coconut Oil

1 tsp Baking soda

1 tsp Vanilla Extract

1 tsp Baking powder

1/4 tsp Salt

METHOD

Preheat the oven to 350ºF.

Whisk banana slices, coconut flour, coconut sugar, extra virgin coconut oil, eggs, baking soda, salt, baking powder, and vanilla & form a lump-free batter.

Pour the batter into a loaf pan lined with parchment paper.

Bake for 50-55 minutes until the center of the loaf rises and starts to crack.

Slice & serve after it cools completely.
