Coconut Roti (Flatbread)

These soft and bready rotis have a delicious coconutty flavor fused with the spiciness of hot chili. You can serve these with curry during lunch or dinner, or enjoy these with peanut butter or jam as breakfast.

INGREDIENTS

1/2 cup Cocofly's Coconut flour

2 tbsp Psyllium husk

1 cup Water

1 tbsp Coconut oil

1/4 tsp Baking soda

1/4 tsp Salt

1/4 tsp Chili powder

1/4 tsp Turmeric (optional)

1/4 tsp Cumin powder (optional)

METHOD

Knead all ingredients together into a soft dough while adding the water gradually.

Coconut flour absorbs a lot of water. Make sure you check the kneaded dough. If it is too hard, add more water.

Separate the dough into small balls.

Flatten the dough balls between two sheets of baking paper.

Brush both sides of the rotis with coconut oil.

Cook on a hot griddle until the rotis are golden brown on both sides.
