Gluten-free Coconut Mayonnaise

Gluten-free coconut mayonnaise is a perfect substitute for those who do not like store-bought mayonnaise. This DIY mayonnaise uses all-natural ingredients, and it's rich in healthy fats.

INGREDIENTS

1 Whole egg (at room temperature)

1 Egg yolk (at room temperature)

1 tsp Mustard powder

2 tbsp Lemon juice

1/2 cup Olive oil

3/4 cup Cocofly Organic Extra Virgin Coconut Oil (melted)

A pinch of Salt and Black pepper

METHOD

Put the whole egg, egg yolk, mustard powder and lemon juice in a blender and blend until smooth.

While keeping the blender on low speed, slowly drizzle olive oil & coconut oil.

Add salt and black pepper.

Place the mayonnaise in a jar and cover tightly.

Leave it on the counter for 5-7 minutes before refrigerating.
